Castelluccia noodles are of exceptional quality. These "eye noodles" are the symbol of the Apulian city of Bari and in Puglia, so to speak, the national dish. Castelluccia Orecchiette have a slightly longer cooking time (about 20 minutes) due to its shape and thickness. Traditionally, meat ragout goes very well with this pasta.

Orecchiette 500g

The Orecchiette, also called "strascicati" or "strascinati" (drawn), are one of the most typical formats of Apulian cuisine. They have the shape of a small disc slightly curved in the middle, and are between 1.25 and 1.35 mm thick in the middle, while at the edge they are between 1.38 and 1.45. In the gastronomic tradition of Puglia's homemade noodles, only white resin wheat flour and water are used. The dough is divided into small pieces, which are then pulled over the work surface with your finger to give them the typical shape, with the edges then turned over with the thumb. According to the Apulian tradition, the orecchiettes are usually cooked together with broccoli or potatoes in salted water and then prepared with tomato sauce, pecorino cheese or oil and garlic. They are also known as "Recchie" and are served with lamb or vegetable ragout and ricotta.
